How to make spaghetti in tomato sauce

Spaghetti may seem easy to make but trust me, it is also the easiest meal to ruin if you do not follow the recipe to the letter.


Prepping spaghetti

Steps on how to prepare Spaghetti:

  1. Add water in a cooking pot (half full)
  2. Add salt (1 tsp)
  3. After the water has boiled, add your spaghetti ( 250 gms) or according to your serving
  4. Toss the spaghetti in the pot to ensure even cooking and it’s not sticking together
  5. Cook the pasta for 10 minutes or until you can bite through or firm. Make sure you don’t overcook it.
  6. Drain the pasta but leave little water for the sauce. Add the pasta straight away in the sauce to prevent it from sticking together as it cools. Do only this step if you making a spaghetti sauce.

Steps on how to prepare the tomato sauce:

  1. Add 2 Tbs of oil in a large pan or sufuria
  2. 3 Cloves of garlic (smashed) into the hot/warm oil followed by chopped onions
  3. Spices to your liking
  4. Saute for a few minutes
  5. After the onions have turned a golden brown colour, add the puree of 5 tomatoes into your pan
  6. Stir the puree of tomatoes till its fully cooked
  7. Add salt to taste
  8. Cover and cook over low flame for 6-7 minutes
  9. Add your cooked pasta in the sauce and stir it to evenly coat it with the sauce
  10. Serve immediately. Best enjoyed while still hot.

1. Mokimo

To make these you need potatoes, boiled maize, stinging nettles and other ingredients of choice.

Peel the potatoes and bring them to boil.

Blend the stinging nettle and add to the boiling potatoes.

Add the cooked maize to the mixture.

Leave them to cook till the water dries leaving small amount.

Mash the mixture till the potatoes are fine.

Add other ingredients of your choice.

Serve while hot with any sauce.

2. Matoke peanut sauce

Boil bananas and put them in cold water when ready to avoid overcooking.

Fry onions in a pan and add blended onions to it.

Blend raw peanut and add to the sauce.

Add any other ingredients of choice to the sauce.

Add the cooked bananas to the sauce and let it steam for a few minute for the sauce to get in.

Serve when hot.

3.  Chicken biriani

Boil rice separately when cooked set it aside, do not cover to avoid overcooking.

Fry the chicken and onions separately.

Blend yogurt, tomatoes, onions, and other spices of choice.

Add the blend to the fried chicken, stir the mixture.

Add the fried onions to the mixture and let steam for a few minutes.

Serve with rice and a drink.

4. Jollof rice

Blend tomatoes and all the spices you desire.

Make sure it is well blended.

Fry onions till golden brown and add some tomato paste.

When ready add the blend and stir well til well cooked.

Add some water that is proportional to the amount of rice being cooked.

Add the rice once the water is boiled and let it cook.

Once ready serve with any sauce of choice.

5. Masala fries

Fry onions till golden brown.

Add tomato paste, pepper, masala and other spices let them cook for 5 minutes.

Add the fried fries to the mixture and garnish with coriander leaves.

6. Steamed fish

Make a sauce of tomatoes, onions, pepper and other spices of choice.

Add milk to the mixture and leave to boil for some few minutes.

Once ready add the fish to the sauce.

Turn the fish evenly on both side.

Serve hot.

7. Meat balls

Heat a pan add some oil.

Add all the spices needed let them heat.

Put minced meat to the cooked spices and mix.

Leave them to cook.

Once ready coat them with breadcrumbs and leave them aside for a few minutes.

Make shapes of your choice.

8. Plum  ukwaju juice

You need ginger, plums, ukwaju and honey.

Soak ukwaju for some time then sieve to separate the seeds from the pulp.

Chop the plums and ginger put them in a blender, add ukwaju and honey.

Blend the mixture.

9. Egg masala curry

First boil the eggs. Put oil in a frying pan, add turmeric and heat.

Fry the boiled eggs in the oil.

Fry onions in another pan with other spices till brown.

Add ginger garlic paste fry till brown.

Add tomato paste and green chilies to the mixture.

Add more spices and cook foe 2 minutes.

Add hot water to the mixture to prevent it from drying and let it cook for 6 minutes.

Add the fried eggs to the sauce and mix.

Add garam masala and coriander to the mixture.

Cook for two minutes.

Serve while hot.

10. Beef kebab

Add red onions, green onions, coriander stems to a pan cook till ready, put in a bowl.

Add minced meat, eggs and other ingredients the the bowl, mix well.

Make sausage shapes from the minced mixture.

Make an egg mixture of garlic and pepper.

Coat the rolled minced meat with the egg mixture and fry them repeatedly till the coating turns brown.
