Recipe: Lemon and ginger cake

Baking cake so that you can enjoy it with your family for breakfast is a brilliant idea. We have an easy cake recipe. You don’t need to have taken baking classes to make this one. It’s easy and full of flavor.

Ingredients

250g ginger biscuit

75g brown unsalted butter

2 litres vanilla ice cream

Zest and juice of 5 lemons

Green good colour

400g whipped cream

75g icing sugar

Zest of 5 limes

Directions

  1. Blitz biscuits in a food processor or use a rolling pin to bash them to small pieces. Add melted butter until you have a breadcrumb – like mixture. Press this firmly down into a 19 cm cake tin, preferably with a loose bottom and place it in the freezer.
  2. Meanwhile, beat the 2 liters of the vanilla ice cream in a food mixer for 5 mins. Add the zest and juice of 5 lemons and a few drops of green food color if you want a slightly greener effect. Pour the ice cream into the biscuits base and place back in the freezer for at least 6 hours.
  3. Beat the cream and icing sugar until you have soft peaks. Remove the cake from the freezer and spread the cream on top. Return it to the freezer until you’re ready to serve!
  4. Sprinkle the lime zest of the 5 limes in the cake before serving. Use a sharp knife and a strong arm to cut through.
